ChalkStream Trout Terrine

A delicious 2 Star Great Taste Awards smoked trout mousse made with prime smoked trout fillets combined with fromage frais, horseradish, lemon juice and parsley, all encased in award-winning cold smoked trout. A stunning starter for 6 or light lunch for 4. Suitable for freezing at home.

Serve well chilled from the fridge, remove lid and turn out, gently squeezing the sides of the pot. Slice thickly with a very sharp knife. Plate up with a simple green garnish of watercress or lettuce, maybe a quail's egg or two, and serve with Melba toast. A show-stopping and easy-to-prepare plate of pure luxury!
